This book was kind of a deception... just a few reflections through a combination of high quality photographs (more directed towards artistry rather than to show a particular dish) and product combination, oftenly raw, that tend to show the "inmediate cuisine" he has for long proclaimed.I would rather go for the exceptional "La Cuisine Inmediate", if you can find it, or the spectacular "L'Invention de la Cuisine", a DVD in which Michel Bras, Olivier Roellinger and Gagnaire show how they create dishes.
